Now we will start with our second dish that is Toor and Jhilangi lentil. There are a variety of names for this lentil and Jhilangi is also known as Naurangi Dal. It's the colour of the lentil soup which has nine colours which give it the name of Naurangi dal. Toor needs to be soaked overnight and jhilangi needs to be soaked for just half an hour before cooking. The lentils are then washed and added to the cooker with water along with salt and turmeric powder. Leave the cooker on till 5 whistles. Take a pressure cooker and add oil along with jakhia also known brown mustard. Once it starts crackling add chopped garlic, onion and ginger. Make sure you keep stirring it till its golden brown. Add slit green chillis and more the better as Garhwali food is spicy to maintain the body temperature f
