We are making 'Aloo (potato) Thechani' is a very popular dish in Garhwal. We make aloo thechani and mooli (radish) thechani in Garhwal. In garhwali cuisine, we use the potato with its skin to make aloo thechani. We wash the potato and then we mash the potato with the help of pestle and mortar. With this potato breaks down into small pieces. We will make this in a pressure cooker due to the altitude you can make it in a wok as well. First, add some oil and jakhya as well as cumin. Mash peeled ginger-garlic and then add it to the cooker once the jakhya starts crackling. Once golden brown add potato along with salt to taste. Add chopped tomato, coriander powder, red chilly powder, turmeric powder and mix the ingredients well. Once mixed well add chopped onion to it. Add freshly chopped corian
