An in site agricultural field unit for making jaggery runs in the fields in this rural UP setting. The workers stir the sugarcane juice in a massive ground karhai, and create the jaggery which turns golden yellow in colour. Steam rises up into the winter sky. The sugarcane bagasse or waste by-product piles up into little mountains, to be re-used as bovine feed or as a fuel to heat up the sugarcane juice. Imagine falling into that vat of boiling sugarcane juice. It would be a clear-cut case of death by jaggery!
