Farm-fresh gurh being made in a fiedl factory in rural Uttar Pradesh, with the cane coming right off the fields. The concentrated cane sugar derived from fresh sugarcane is poured onto a concrete structure and chunks of the concentrated syrup is turned into smaller balls of jaggery. The jaggery is let off to dry before packing. Watch a close-up of the jaggery balls and a quick time lapse of the process. Jaggery is a sweet kind of molasses made from cane sugar which is eaten all over India. Jaggery blocks come in different sizes and colours.
