Light fluffy idli is prepared by steaming to accompany dosa sold at a road-side outlet in Delhi. Protected by his sun umbrella, and powered by his gas stove, with basic water resources for cleaning up, he pours the batter into the round depressions in the idli maker steamer, and puts the lid on, to allow the rice based dough batter to rise, in steaming. Batter is poured onto the pan, and a dosa is lined up for patrons of an outdoor food stand at Bhikaji Cama Place in New Delhi. The round dosa is patted down with a ladle. Special Masala Dosa and Plain Dosa are the order of the day! The stuffing is added in - masala and potato for the former and nothing more than the batter-prepared pancake for the latter. It is unfortunately served on a thermocol plate. When will India stop using thermocol
