Idli, Dosa stuffing and other South Indian foods being made near Bhikaji Cama Place in Delhi

Potatoes are boiled and peeled before being cut up for inclusion in the stuffing. Dosa stuffing being prepared in a frying pan, with lots of oil, thus debunking the belief that dosa is healthy and not too deep fried! Batter is poured onto the pan, and a dosa is lined up for patrons of an outdoor food stand at Bhikaji Cama Place in New Delhi. The round dosa is patted down with a ladle. Special Masala Dosa and Plain Dosa are the order of the day! The stuffing is added in - masala and potato for the former and nothing more than the batter-prepared pancake for the latter. It is unfortunately served on a thermocol plate. When will India stop using thermocol which simply does not disintegrate or get recycled?
