Mung beans — a type of small, green legume in the same plant family as peas and lentils — is a high source of protein, fiber, antioxidants and phytonutrients. Although in most parts of the world they’re less popular than other bean varieties, like chickpeas or black beans, mung beans have some huge health benefits to offer! Mung bean planting should occur early enough that harvest will occur before the rainy season and bloom or pod fill will occur before the hottest, driest part of summer and late enough that all danger of frost has passed and soil temperatures are above about 60 degrees Fahrenheit. Two plantings annually, one in spring and another in fall, are often possible in warmer regions. Tilling or cultivating the top several inches of soil breaks up the ground and controls weeds. M
