Aloo Paranthas are prepared at Devender Tea Stall near IIT, in Hauz Khas. This is a true Delhi street food institution! See the piles of eggs in trays. Potatoes are prepared in a pressure cooker and mixed with the batter that is then fried. The dough is rolled out in a similar fashion to how chapattis are made. The owner's wife does the rolling with her rolling pin and strong arms. She kneads the dough and introduces the potatoes to the mix. Oftentimes, the mashed potato has already been kneaded into the dough... Prathas or Paratha have a lot of oil in them, so they're not exactly health food!
