The sambusa may not originally be an Indian creation, but we have certainly turned it into an Indian good item of great esteem! The shells look almost artistic - like little chortens in white! The dhaba owner sits and kneads the samosa batter on a chopping board. He uses a rolling pin to flatten out the mounds of batter, into neat little pancakes, before his wife adds the filling of potatoes, dried fruit and more, and then deep frying the shaped conical sambusa shell.
