Women in traditional Rajasthani attire preparing Dal Baati Churma, one of the most famous dishes of Rajasthan, at the Pushkar Mela. The meal includes dal (spiced lentils), baati (baked wheat rolls), and churma (a sweet mixture made from crushed baati, ghee, and sugar or jaggery). The women are cooking on a traditional mud stove (chulha) fired with wood, a method that is still used in many villages across Rajasthan. Round wheat baatis are placed on and around the chulha to bake, while large metal pots are used to prepare the dal.
