Spread out on a frying pan sitting on a gas stove burner, dosa rice-based batter is evenly spread and then widened into a thinner and wider circle. The lower points start browning and then the cook turns the pancake over., and keeps jabbing it with the tongs. Yet again he turns it over, to brown it equally on both sides. He folds the dosa pancake once and then twice, to give it its familiar dosa shape. He pats it down and its ready to serve! He adds some dosa chutney to the plate before heading over to the customer. This is a simple dosa with no filling, so it's a plain masala dosa!
