Indian farmers harvesting carrots from a field in the outskirts of Kashmir. Carrots are a popular root vegetable that are easy to grow in sandy soil. They are resistant to most pests and diseases, and are a good late season crop that can tolerate frost. Not all carrots are orange; varieties vary in colour from purple to white. Commercial cultivation of carrot is successful in most of the regions. About 60% of world carrot production occurred in Asia alone. However, selecting quality seeds/seedlings and good farms where to buy them from can be tricky. Carrots are easy to grow in a garden with deep, loose soil. They are packed with beta carotene.
