These triangular, deep-fried savoury pastries stuffed with spiced potatoes and peas are an iconic Indian snack. The samosa is a fried or baked dish with a savoury filling of spiced potatoes, onions, peas, lentils and, sometimes, minced meat. The samosa was introduced in India when cooks from the Middle East and Central Asia migrated to work in the kitchens of the rulers in India and the nobility in the 13th or the 14th Century. It was then known as 'samsa'. The samosa is typically triangular in shape. Samosas in India usually contain a filling of spicy potatos, peas and dry fruits.
