Pakodas are the go-to snack for North Indians, especially on a cold or rainy day. This savoury, deep-fried pocket of goodness can have multiple fillings like, cottage cheese or paneer, onions, potatoes or even non-vegetarian fare. The covering is that of chick-pea flour. Pakodas are very similar to fritters and are best had with a steaming cup of milky, sweet, Indian style masala chai or tea.
