Rewari is a hard candy popular during the festive season of Lohri and Makar Sankranti in January. Our crew visited this factory in Meerut, Uttar Pradesh where everything is done manually. One of the finishing processes involves warming and mixing the candies in a mixture of powdered jaggery and nuts. This is to increase the sweetness and the taste of the candy. Factory workers mix the candies with fervent hand motions in the warm pan.
