Jaggery or non-centrifugal cane sugar is a common dish in Indian and other South Asian countries. Take a look at one of the factories in Uttar Pradesh which is the largest producer in jaggery. The concentrated sugarcane juice is boiled down to a solidified mass which is then allowed to cool down resulting in brownish blocks of sweet sugar.
