Bihari man makes Ghevar in Sonepur mela

Man fries batter (solution of flour and milk) to make Indian sweet dish Ghewar at a makeshift shop at Sonepur mela in Bihar. Ghewar is an Indian Mithai or dessert. This Rajasthani dessert is very popular in Northern parts of India, specially savoured during Teej and Rakshabandhan festivals. It is a round mesh like fried delicacy drenched in sugar syrup and topped with sliced nuts and flavoured rabri. Making ghewar involves a technique for making its batter and the way it is poured in hot ghee. There are many varieties of Ghevar, including plain, mawa and malai ghevar. Ingredients: • 4 Cups flour • 2 Cups ghee • 4 Cups water • 1 Cup milk • 1 tbsp Almonds (chopped) • 1 tbsp Pistachios (chopped) • 1 tsp Cardamom powder • 1 tsp Saffron (soaked in milk) • 1 1/2 Cups sugar • 1/2 tsp Yellow colo
