A chai stall owner (chai wallah!) at a road-side tea stall serves up piping hot winter-time chai on a Jaipur street side, with the side offerings of buns and other breads. He strains the tea through a plastic strainer and pours it from a height, to make it frothy. The source of power is a LPG cylinder sitting on the ground next to the table. The tea cups are really tiny and are made of paper, with a waxy lining. The tea bubbles in the copper pot...
