Pampore, about 11 kilometres from Srinagar, is the highest producer of Saffron in India. Saffron was brought to India by Persian rulers in 500 BC. Though majority of saffron in India is grown in Kashmir, a very small contribution is also made by Himachal Pradesh. Saffron seeds are sown from July to September and the flowers are ready for harvest towards the end of October. The red coloured stamen of the flower is the saffron that comes in use as the most expensive spice in the world.
