Called by many names, gol gappas, paani poori or puchkas, these crispy, deep-fried dough balls, filled with potatoes, chickpeas, a sweet and a savoury, spicy chutney are one of the favourite, chatpata, Indian street-side snacks. The chaat-wala breaks a small hole in the gol-gappa, puts in the filling and dunks each one into the two chutneys before placing it onto the waiting leaf, bowls of the buyers. Of course, after having your fill of the yummy, tangy sweet and spicy street-food, you can always ask for the 'paani' or the spicy chutney.
