First wheat dough is prepared in a large container with flour, water, oil and some carom seeds. Once the dough is slightly stiff, small balls are made and flattened before they are thrown in the burning hot oil. Once golden brown the puris are taken out. People gather around an Indian street-side soup kitchen or Bhandara as called locally for free food. This is set up to provide free food for hospital patients and their families in India near AIIMS and Vardhman Medical College & Safdarjung Hospital. It is a community service where fried wheat bread along with sweet and a savoury potato dish is served.
