A fishmonger first cuts off the fins from the Rohu fish and then with the help of his knife he scales the fish. Then he separates the head carefully so that gills come off as well. He then starts cutting the tail into two big pieces. He directs the remaining portion into half and removes the insides of the fish. Once it is cleaned from inside he cuts the fish into big chunks. The rohu, rui, or roho labeo is a species of fish of the carp family, found in rivers in South Asia. It is a large omnivore and extensively used in aquaculture.
